The new factory hosts cutting-edge automation, making the popularity of the drink hard to miss, as production goes from 40,000 cans to 10 lakh. A drink that was hardly on anyone’s tongues and only on the fringes of the market is now a popular source of nutritional energy for the young generation of Indians, as they prioritise their health and habits. With its rise from artisanal curiosity to mainstream staple, the kombucha movement mirrors India’s growing appetite for conscious beverages.
