Paris based firm Jouin Manku reinvents the 124 year old Bar & Billiard Room by Alain Ducasse in the iconic Raffles, Singapore

Raffles started as a club during British colonial rule more than a century ago. The luxury hotel continues its tradition to serve as a popular gathering space for visitors and locals alike. When the Singapore based heritage hotel recently unveiled its renovated premises, it also revealed the newly done up Bar & Billiard Room by renowned chef by Alain Ducasse.

Designed in collaboration with Parisian firm Jouin Manku, the Bar & Billiard Room or BBR reflects the rich cuisines of the Mediterranean region, while creating a contemporary setting that honours the heritage of Raffles. Crafted to complement Ducasse’s latest culinary concept—Bodega, which combines Mediterranean cuisines in a tapas-style of preparing and enjoying food—BBR offers a jovial milieu for guests to relax and enjoy. The large open kitchen at the heart of BBR is characterised by a striking blue sculpture that resembles the glistening body of a giant fish moving through the intercontinental sea.

Jouin Manku has created modern interiors sympathetic to the colonial style building of Raffles that transports guests to the Mediterranean sea, with its beguiling aromas and enticing flavours.
