Ingredients:
310g of canned corn kernels
4 egg yolks
2 finely chopped and seeded jalapeño peppers
2 tbsp of finely chopped fresh chives
2 rolled, shortcrust pastry sheets
1 cup of brie cheese
½ cup of cream
salt, sugar and parmesan to taste

Method:
Preheat oven and a baking tray to 180°C (fan-forced). Grease a 3cm deep, 22cm (base) round fluted, loose-based flan tin. Line its base and sides with pastry. Freeze the pastry for 10 minutes or until it is firm. Then, place the tin on the heated baking tray and bake for 10 to 12 minutes, until the pastry is light golden.

In another bowl mix corn, cheese, jalapeño and chives. Arrange this mixture over the base of the pastry. Beat the egg yolks and cream in another container. Season this blend with salt and sugar before pouring onto the corn mixture. Top with a drizzle of parmesan and bake for another 25 minutes until it sets. Serve hot.
